Sautéed Green Beans with Mushrooms and Caramelized Leeks

Serves 4-6 | Gluten-Free & Vegan 

Elevate your holiday table with this healthy twist on a classic green bean dish! Packed with fresh vegetables, savory mushrooms, and naturally sweet caramelized leeks, this recipe skips processed ingredients for a wholesome, flavor-packed side that everyone will love. Perfect for Thanksgiving or any gathering, it’s as delicious as it is nutritious.  

Ingredients:  

- 3 tbsp olive oil  

- 2 leeks, cleaned and sliced  

- 1 lb fresh green beans, trimmed 

-1 tbsp. olive oil  

- 8 oz sliced mushrooms  

- 1 garlic clove, minced  

- Sea salt, pepper, and red pepper flakes  

Directions:  

1. Caramelize the Leeks: Sauté leeks in olive oil over medium-low heat for 25-45 minutes until golden and sweet. Reserve 1/4 cup for a crispy topping. 

2. Blanch the Beans: Boil green beans for 3 minutes until tender-crisp, then cool in ice water.  

3. Cook the Mushrooms: Sauté mushrooms in olive oil until browned, about 10 minutes.  

4. Combine: Add green beans, garlic, and all but ¼ cup caramelized leeks to the pan. Toss, reheat and season with salt, pepper and red pepper flakes.  

5. Crisp the Leeks: Turn up the heat on the pan with reserved caramelized leeks and sauté until crispy.  Drizzle with additional oil if necessary. 

6. Serve: Transfer everything to a platter and top with crispy leeks.  

Make Ahead Tip: Blanch beans and caramelize leeks in advance for quick assembly.
