Looking for a healthy holiday treat that’s as festive as it is delicious? Say hello to Harvest Bark!

This was a big hit at our Christmas Open House, and I received so many requests for the recipe that I just had to share it.

Packed with nutrient-rich pistachios and dried fruits, and made with quality dark chocolate, it’s a guilt-free indulgence that’s perfect for any Christmas menu.

Whether you’re gifting it, serving it at a party, or enjoying it with your family, this simple yet elegant treat is sure to bring some holiday cheer!

Ingredients

  • ¾ cup yellow raisins
  • 2/3 cup craisins
  • 1 cup pistachios, slightly broken
  • 1 pound quality dark chocolate, preferably without sugar.
  • ½ teaspoon oil

Directions

  1. Melt chocolate and oil together in a double boiler. Stir until smooth.
  2. Combine fruit and nuts. Add 1/3 of it to the melted chocolate.
  3. Spread in a pan that has been lined with parchment paper.
  4. Sprinkle the rest of the fruit and nuts on top and gently press in.
  5. Cool until firm.
  6. Break or cut into 1-inch pieces and store in the refrigerator.

Note: Use Lilly’s Dark Chocolate baking chips if you want to avoid sugar. Alternatively,
Ghirardelli has a quality dark chocolate baking bar with low sugar content.
